When pub closures left a surplus of Sparkke Vintage Cider that couldn’t be sold on tap, Mitch saw an opportunity to transform it into something exceptional. What emerged was Spilt Milk, a peasant-style cheese made with entirely repurposed products that were initially destined for waste.

With its simple elegance, Spilt Milk offers a delightful caramel note from the cider wash, making each bite a celebration of resourcefulness and local craftsmanship.
