Steamed Coral Trout Fillets
Coral Trout
2 x 180g skin on coral trout fillets
2 tbsp sesame oil
1 tsp white pepper
4 cm piece ginger, julienned
2 cloves of garlic, finely chopped
3 spring onions, thinly shredded (white and green parts)
Sauce
3 tbsp soy sauce
2 tsp honey
1 tsp sesame oil
1 tsp chilli condiment (I love LOUDER, or Laoganma Sauce Condiments - Chili with Peanut)
Mixed greens, steamed to serve
White rice, steamed to serve
Method
Place fillets into a dish that fits into the steamer basket. Scatter over ginger, garlic, and half the spring onions. Pour the sesame seed oil over the top of the fish.
Place remaining spring onion shreds into iced water to curl them for garnish.
Steam for 6 - 7 minutes (depending on thickness) until fish turns opaque and flakes to touch. Place on a serving dish and set aside.
In a small saucepan, mix the soy, honey, sesame oil and chilli. Heat the sauce and drizzled over it over the fish.
Serve fish on top of rice and topped with remaining spring onion curls, mixed steamed greens such as bok choy, broccoli, sugar snaps and snow peas.
