How We Love It

Pan-sear the fillets skin-side down until crisp, then finish with a squeeze of lemon and a scattering of fresh dill. The firm, robust flesh also holds up beautifully to grilling or hot-smoking for real depth of flavour. Sockeye is in fact one of the very best salmon varieties for curing and smoking — its firm, lean flesh and deep colour make it a natural choice for gravlax, and it's traditionally the salmon of choice for Canadian First Nations' candied smoked and oak-smoked salmon.
