Skull Island is the premium tiger prawn label of Austral Fisheries. The prawns are wild-caught in Australia's Northern Prawn Fishery, across the remote tropical waters of the Gulf of Carpentaria and the Top End. They are hand-selected at sea and frozen on board within hours of catch. Known for their striking tiger-striped shells, firm, meaty texture and natural sweetness, they are a favourite in some of Australia's best restaurants.

How We Love It
Grill shell-on over high heat. Brush lightly with olive oil, season with sea salt and cook until the shells are charred and the flesh is just opaque. Finish with lemon, fresh herbs and a little good butter. Simple cooking, exceptional prawns.
