Rhubarb Salsa

Whip together this quick and easy 10-min salsa this spring. This pairs beautifully with grilled lamb cutlets, barbecued pork cutlets and grilled salmon or chicken.

Ingredients
  • 1/2 bunch rhubarb, ends trimmed, finely chopped
  • 2 ripe tomatoes, finely chopped
  • 1 red onion, finely chopped
  • 2 radishes, finely chopped
  • 1/2 cup coarsely chopped coriander
  • 2 tbsp extra virgin olive oil
  • 1 lemon, zested, juiced
  • Lemon wedges, to serve

Place the rhubarb, tomato, onion, radish, coriander, oil, lemon zest and lemon juice in a medium bowl. Season and toss to combine.
