Simple Steamed Prawns with Mango Chilli Dipping Sauce
1kg Shark Bay Prawns
1 large mango
1 tsp finely grated lime rind
1 tbsp lime juice
1 tbsp extra virgin olive oil
2 tbsp finely chopped fresh coriander leaves
1 long red chilli, finely chopped
Directions For Prawns:
Fill a pot or wok about 1/2 full with water. Place a steamer basket over the water and bring to a boil. Place the dish with prawns onto the steamer basket. Cover wok, and steam prawns for 10 minutes, until opaque. Let them cool and then peel them and refrigerate or get to room temp.
Directions for Dipping Sauce:
Finely chop 1/3 of the mango and reserve. Place lime rind and juice, oil and remaining mango in a small food processor.
Process until smooth. Pour into a small serving bowl. Stir in half the coriander. Season with salt and pepper.
Top with reserved mango. Sprinkle with chopped chilli and remaining coriander.
