Grace Cheese 180gm - Kris Lloyd Artisan
Goat milk is sourced from small local goat farms giving Woodside excellent control over the quality and seasonality of the milk. Saanens, British Alpine and Toggenburg breeds all feature in the herds. Curd is set overnight to make this fresh cheese in a traditional lactic set, not unlike yoghurt. The curd is carefully ladled into hoops once drained the curd is lightly seasoned with salt and left to age for 10 or so days, after which the cheese will bloom a wrinkly rind.
The rind is the mould variety known as Geotrichum which in the world of cheese is affectionately know as GEO. This cheese is typically found in France and has a unique flavor that the GEO mould is responsible for.
As Grace matures she will become a little stronger but still maintain her elegance. The dense paste will go slightly yellow around the
rind as it ripens ad oozes is fabulous pate.
